Heres the recipe from the sushi cooking class…. 
1 avocado cut into cubes
1/3 cup parsley chopped fine
1 tablespoon minced ginger
2 teaspoon minced garlic

1/2 red bell pepper sliced into thin sticks
1 cucumber thin sticks
1 chopped portabello mushroom 
1 apple sliced into matchsticks
1 carrot matchstick size
Chives or scallions
Nori
Nama shoyu or Vinegar of your choice
Marinade the chopped mushrooms in the nama shoyu or vinegar for 15- 20 minutes.
Mix the avocado with ginger, garlic and parsley.
Lay Nori out on sushi mat and layer carrots, apple, pepper and chives.  add avocado mix on top. squeeze the liquid out of marinated mushrooms and put on top. roll sushi then cut into bite sized pieces.

 

 

 

 

LoveBites

1/2 cup avocado
1 1/4 Cup Raw Honey
1/2 Cup raw cocoa powder
1/2 cup almond flour
6 whole eggs
1/2 teaspoon vanilla extract

Put avocado in standing mixer and whisk at high speed until consistency is smooth.  Introduce honey on low speed once incorporated turn mixer up to medium speed. Mix in cocoa powder on low speed.  Take mixture out of standing mixer and begin to incorporate flour with spatula. Once mixed add eggs in one at a time. add extract and finish mixing.  Transfer brownie to nonstick baking dish and bake at 350F

Banana bread (adapted from “Breaking the Vicious Cycle)

3 cups Almond Flour
1/3 Cup avocado
2/3 Cups honey
3 medium sized extra ripe bananas
1 teaspoon baking soda
1/2 cup raw macadamia nuts(optional)

Mix all ingredients in large bowl
Bake at 350F for 40 minutes
